How To clean and Grill scallops - cocquilles

Meat from the ocean is always tender. The scallops or cocquilles are no exception to that rule. The only thing you have to do is not mess things up. So thats where my video comes in.

Coquilles Appetizer
- 4 coquilles in the shell
- fresh chillipepper flakes
- pepper and salt
- fresh chives chopped fine
- 2 tablespoons lime juice
- 4 tablespoons olive oil
- pepper and salt to taste

How To clean the coquilles:
- cut away the sphincter
- spoon out the scallop
- clean the scallop
- clean the shell

How To:
- prepare the vinaigrette by mixing the olive oil, lime juice, chillipepper flakes and chives
- clean out the shells and clean the coquilles
- Sprinkle the coquilles with olive oil pepper and salt and grill them
- Place them back in the shell, place the shells on the grill and spinkle them with vinaigrette.
- Let it come up to temperature (don't cook for long) and serve
